The star player here is a variety of Oolong tea that is produced only in a certain region of China; where the environmental conditions come together to produce this special blend.

Where it Grows

The actual harvesting process is another thing that separates this tea from others. It has to be harvested very carefully by hand. When the plant is picked, only shoots with one bud and three leaves are chosen. They harvest it in the morning and then let it dry in the sun. After a period of time outside drying, its brought indoors to ferment.

Some of the more important wuyi varieties are:

Da Hong Pao

Comes from only THREE tea bushes. Less than a kilo is harvested each year; and its worth over a million dollars! You're not going to find that one on the internet.

Shui Jin Gui

A flavorful variety that is closer to green tea than is typical.

Tie Luo Han

A light, floral tasting variety. Legend has that is was created by a powerful warrior monk.

Bai Ji Guan

A light, complex tasting variety with yellowish leaves. Its named after a rooster who supposedly gave up its life while protecting an infant.

Rou Gui

Rich and with a sweet aroma. The same leaves can be steeped up to seven times.

Shui Hsien

Dark brown leaves; with a heavy fragrance of honey.
